Move apple trees

Hello,We are going to be moving in the summer of next year and want to take 6 apple trees with us. They are about 3 years old and have just started growing some fruit past summer.I read that the time to do this would be in winter when the trees are dormant. Can we remove them from the ground and keep them in (large) pots and then replant them in summer after the move, or keep them in the pots until fall next year? Thanks for the insights.
